Here is a recipe that will elevate those carrots to a new level on your table. This is a sweet, delicious way to use leftover cooked carrots, or cook up a fresh package for a economical dessert. They won’t even realize they are eating vegetables.

  • 1 pound cooked carrots
  • ¾ cup sugar
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs, beaten
  • ⅓ cup butter, softened
  • 2 teaspoons confectioners’ sugar
  1. Preheat oven to 350 degrees F. Spray a Milkhouse Creamery 48 ounce crock with non-stick cooking spray. In a mixing bowl with an electric mixer beat the carrots with the sugar, baking powder, spices, salt and vanilla until smooth. Mix in the flour, spices, eggs and butter. Pour into prepared pan. Bake in preheated oven for 1 hour or until top is golden. Sprinkle with confectioners’ sugar. Serve with whipped cream if desired.
