Some weeks just beg to end with something special.  I am thinking this weekend needs to include a Saturday morning brunch.  Saturday mornings seem so decadent.  Your work week is finished, and there is still Sunday ahead to enjoy and get last minute chores cleaned up before we start over on a new week.

I think the menu will include some mini bites and a Cappuccino Brulee inspired cocktail.

Here is a fun take on Chicken and Waffles.  You can either cook and cut fresh waffles and chunks of chicken or you can fall back on frozen mini waffles and chicken nuggets that will only require heating.  It has been a busy week so I am going with the latter.  Filling a tiny pipette with maple syrup makes a cute pick.  A squeeze of the bulb when delivered to the plate will fill your chicken and waffle with sweet, delicious syrup.  Yum!


Mini quiche and fruit kabobs will finish the menu.

Cappuccino Brûlée Martini
  • Cappuccino Brulee Martini
  • 1 ½ ounce espresso flavored vodka
  • 1 ounce Irish Cream
  • 1 ½ ounce chilled espresso or strong coffee
  • 1 ounce cream
  1. Fill a cocktail shaker half full of ice. Pour the vodka, Irish Cream, espresso and cream over ice. Shake until very cold. Pour into chilled cocktail glass. Lay caramel garnish on edge of glass.

Now, for the cocktail.  Let’s shake up a sweet coffee and cream concoction and top it wih a little brulee.  To make the brulee topper, melt 2 tablespoons of sugar in a small saucepan.  Heat gently until sugar is an amber color, remove from the heat and drizzle over a silicone mat or parchment paper.  Allow caramel to cool and harden.  Shake up and pour your cocktail and lay the caramel garnish on edge of glass.
