This cocktail is a take on the Salty Dog. It is bright and refreshing. Grapefruit and gin play very well together. The sprig of rosemary in your glass will fill your nose with the piney herb as you sip and enhance the taste experience.
I like to serve this with a bacon wrapped date. You can stuff your date with your choice of nut, perhaps a almond or pecan, but I like to put a little piece of parmesan cheese inside before I wrap it in bacon and bake. The little sharp, salty center is a nice surprise and balances off the sweet date. A nice shrimp cocktail is another good pairing for the Ruby Sunset. Don’t they look cute in repurposed cream jars? Place a little tangy cocktail sauce in the bottom and let everyone have their own container to pick up and mingle.
This drink would be equally at home for a weekend brunch as it would for a pre-dinner aperitif. The beautiful color would make it a wonderful centerpiece for a ladies bridal luncheon. It can easily be mixed by the pitcher to make life just a little easier for the hostess.

- 2 ounces dry gin
- 4 ounces Ruby Red grapefruit juice
- Juice of ½ lime
- Salt for rimming glass
- Rosemary sprig
- Grapefruit wedge for garnish
- Rub the rim of a cocktail glass with a cut wedge of grapefruit and then dip in salt to coat.
- Fill a cocktail glass with ice. Add gin, grapefruit juice and lime juice. Stir to combine. Add the sprig of rosemary and garnish with a wedge of grapefruit.
